BirdsEye and Disney Step Up To The Plate!

     If you are like me, getting your kids to eat healthy is a MAJOR Challenge. I feel like there are just not enough hours in the day to be "That Mom" and create the perfect healthy meal! Cooking/Working/Cleaning might even be harder than running a marathon. Well, maybe not that hard but you get the point. ;)

     We are a busy busy family and trying to get home from work, shuffle kids around and cook a healthy dinner is something that I struggle with on a daily basis. However, I try to make it work. I really do. Sometimes I'm really good at it and sometimes I just flat out fail. #EpicMomFail. I need help! 

      When I saw the press release that Birds Eye Vegetables and Disney were teaming up to promote healthy foods directly to children...I was very intrigued by this campaign.  What a perfect solution to some of my "Mom Fail" issues!  I knew that this was something that I wanted to be a part of. My kids like to eat vegetables and I am really excited to see the different ways to incorporate veggies into their daily diets.

Today, only 10 percent of U.S. children are eating the proper amount of vegetables, as detailed in the USDA's MyPlate guidelines. Through Step Up To The Plate, Birds Eye is dedicated to achieving the long-term goal of increasing the number of children in America who meet the proper nutrition guidelines.

While recent reports show that the obesity rate in 2-5 year olds is declining, the number of elementary-age children who are overweight or obese remains unchanged at a staggering 17 percent. Chicken Broccoli Cheesy Rice Casserole:

Ingredients:
4 Chicken Breasts (Baked and Chopped)--I bake chicken, cube and freeze to cook weekday meals ahead of time.
1 Package of Birds Eye Steamfresh Broccoli (Prepare using directions on the bag)
2 cups of cheddar cheese- 1 cup for the casserole and 1 cup to be sprinkled on the top.
1 can of cream of mushroom soup.
2 cups of cooked rice.
Ritz Crackers crushed.
1 tbsp butter.
Salt and Pepper

Mix it up:
Mix Chicken, Cream of Mushroom Soup, Cheddar Cheese, Rice and Salt and Pepper in bowl really well, add in broccoli last. Spread in 9x13 pan. Top with remaining Cheddar Cheese and Ritz Crackers. Drizzle with butter. 
Bake at 350 degrees for 30 min or until bubbly. 

Low-fat options are available for Cheddar cheese and cream of mushroom soup.
